I am the biggest seafood lover. Underwater critters takes me to my happy place. This Cilantro Lime Shrimp is no exception. It can be prepared in 15 minutes after a simple marinade. Trust me, the marinade makes all the difference. Pair it with a quick vegetable and steamed rice for a tasty, light weeknight meal. 

Marinated dishes make my heart happy because of their simplicity. I love marinating my protein the night before or in the morning, forgetting about it and whipping dinner up in under 30 minutes. For a busy mom or busy anyone, these types of meals are golden. My mini human is only 10 months, so I look for quick meals for 2. Cilantro Lime Shrimp made the cut, we loved it! ♥

Cilantro Lime Shrimp Marinade

Shrimp larger in size or prawns work best for this dish. You don’t need many of them to fill your belly. In fact, I used under 1lb, just enough for 2 dinner bowls. Be sure to clean those little suckers, peel, devine and pat dry with a paper towel. Once they are clean, toss in a bowl with onion powder, garlic powder, minced garlic, fresh lime juice and lots of fresh cilantro. Cover it up and give the shrimp some time to absorb the acidity, and spices.

Let’s get to cook’n some Cilantro Lime Shrimp. Heat a little bit of olive oil in a sauté pan over medium-high heat. Add some more minced garlic and lime juice, and saute until the garlic is fragrant. Next, lay the marinated shrimp in a single layer and cook for 3 minutes per side, until no longer opaque. Don’t forget to pour in all the extra marinade into the pan, the more the flavor the better. Finish with a pinch of red chile flake for that extra spice kick.

Cilantro Lime Shrimp

Marinated shrimp in cilantro and fresh lime juice just in time for the cool summer weather. Use many ways, in tacos, on tostadas, as a salad topper or over rice!

Cilantro Lime Shrimp Marinade

  • 12 oz Large Shrimp (peeled, devined, patted dry with a paper towel)
  • 1 Lime (juiced)
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • .1 oz Garlic, minced (about 2 medium size garlic cloves)
  • .8 oz Cilantro, fresh (rough chopped)

Cilantro Lime Shrimp

  • 1 tbsp Olive Oil (extra virgin)
  • .3 oz Garlic, minced (about 3 large garlic cloves)
  • 1 Lime (juiced)
  • 1/4 tsp Red Chili Flake


Cilantro Lime Shrimp Marinade

  • Combine the shrimp, lime juice, onion powder, garlic powder, minced garlic and fresh cilantro in a bowl. Marinade at least 1 hour, but no more than 8 hours. (For this recipe, I marinated 4 hours.)

Cilantro Lime Shrimp

  • Heat the olive oil in a saute pan over medium-high heat.
  • Add the minced garlic and saute until lightly golden and fragrant, about 1 minute. Be sure to stir consistently to ensure the garlic does not burn.
  • Squeeze the lime into the pan and let it slightly boil. (This will happen right away.)
  • Add the marianted shrimp in a single layer and cook until pink and no longer opaque, about 3 minutes per side. Make sure you add in all the excess marinade into the pan.
  • Sprinkle the red chili flake over the top and give one last stir.
  • Remove from the pan and pair with a vegetable and white rice for the ultimate weeknight meal. 🙂


  • I normally pair my Cilantro Lime Shrimp with garlic rice and corn on the Cobb. Yum!
  • You can also use in tacos, tostadas, or as a salad topper
  • Be sure to marinade at least 1 hour, but preferably 4 hours. Be sure not to marinate more than 8 hours or the acidity will begin to cook the shrimp
